Black Bean Quesadillas
| Ingredients | | 8 8- inch flour tortillas | | 1/2 cup grated sharp cheddar cheese | | 1 cup grated pepper jack cheese | | 2 green onions, sliced thin | | 1 cup canned black beans, rinsed and drained | Instructions | | 1. Preheat a griddle or skillet to medium heat. | | | 2. In a small bowl, combine the cheeses, green onions, and beans. | | | 3. Lay four tortillas flat on a clean surface and spread the filling evenly over them, then cover each with another tortilla. | | | 4. Place the quesadilla on the griddle and cook 3-4 minutes per side, until golden brown. | | | 5. Remove to a cutting board and cut into 6 wedges to serve. | | | 6.
