Black Bean Quesadillas

Ingredients
8 8- inch flour tortillas
1/2 cup grated sharp cheddar cheese
1 cup grated pepper jack cheese
2 green onions, sliced thin
1 cup canned black beans, rinsed and drained

Instructions
1. Preheat a griddle or skillet to medium heat.
2. In a small bowl, combine the cheeses, green onions, and beans.
3. Lay four tortillas flat on a clean surface and spread the filling evenly over them, then cover each with another tortilla.
4. Place the quesadilla on the griddle and cook 3-4 minutes per side, until golden brown.
5. Remove to a cutting board and cut into 6 wedges to serve.
6. Serve with your favorite salsa.
Cooking time after preparation: 6-8 minutes
